| [#10724] Leak Club for Leakies or Leak user 味精是甚麼？ 好幾百年以來，有些中國和日本的婦女一直使用某類海草製成調味品，燒菜時加進去，令食物味道濃郁。 1908年，東京大學教授池田菊苗博士研究發現：原來那些海草裡含有的谷氨酸，是令食物味道濃郁的秘密。他把這種化學物質抽了出來，形成結晶體。 日本商人馬上拿了這個發現去賺錢，翌年已經有味精在市面出售，那些化學物質是由小麥提煉出來的。 今天，全球約有二十個國家生產味精，每年產量達400,000噸。 味精的化學名稱叫谷氨酸鈉（Mono-sodium-L-Glatamate，簡稱MSG），是谷氨酸鹽的一種。在天然食品之中，釵h都含有谷氨酸鹽，例如番茄、芝士、磨菇、黍米、青豆等。大多數食品含有1%-35%蛋白質，其中一般有10 - 35%是谷氨酸鹽。人體也不斷生產谷氨酸鹽，這種物質是製造蛋白質不可少的成份，對於幫助體內新陳代謝作用非常重要。味精與人體自己製造的谷氨酸鹽完全沒有分別，消化之後進入體內正常的生物化學途徑，製造能量。 目前市面出售的味精都是白色晶體粒狀物，沒有氣味。最流行的牌子是「味之素」，但香港也有本地及其他東南亞國家的產品以其他牌子出售，成份大同小異。這些味精幾乎全部都是從甘蔗的糖漿及木薯澱粉經過複雜的發酵過程提煉出來的。 ________________________________________________ 其實MSG都是從無害物料提煉出來的... |
