| [#22] ...生蠔... they do... if you touch the edges wright after you have opened it, you will see they contract. But this only last for about 10 mins. I have ordered from oriole a few times, total about 100 pcs, only 1 was spoiled. You need to flush them thoroughly first, and also scrub it to get rid of the dirt and worms. Oyster opening is not that difficult, just need some practice. then you rinse the meat with drinking water to flush out the chips from the shell during opening. Squeeze a lemon over it and a dash of tabassco is the perfect way to get it ready for oyster sucking. |

| [#23] ...生蠔... BTW, oyster worms are NOT parasites, they just live on the cracks or layers of the oyster shells. It has nothing to do with the health or condition of the oyster. Follow the R rule for french, and do the reverse for australian. |

But then, different breeds have different sizes. all australians and Irish are fairly consistent, while for french, the only type that has "size" category is belon (from 0-000000). Most of what we can get in hong Kong is 0000. There is the US Jumbo, which is too big for oyster sucking I find. In general, size doesn't really matter, except for belon. I usually buy oyster from supermarket and never tried web ordering before. Anyway, is it a must to use oyster knife to open? Any tricks?
